In 1985, Harris received a Bachelor of Science in food and nutrition from Southeast Missouri State University, where she received a Master of Arts in home economics with a food and nutrition emphasis in 1995. Her thesis was written about nutrition practices of rural elderly in Scott County African-Americans. In December 2008, she received her doctoral degree in educational leadership and policy. Her dissertation was about "A Descriptive Analysis of the Dining with Diabetes" program in Southeast Missouri.
